Dawn — Nineteenth Century Cocktails. Our love for a hand crafted cocktails started in Chicago. Specifically in a place called the Violet Hour — a very different type of bar. A modern speakeasy. Now these days whenever we travel to a new city we always look for vintage inspired bars and lounges where there is a true mixologist, the ambiance of the place is special with the specific dark lit rooms and appropriate music that matches the exchange of ideas and philosophy about any subject.

Cocktails have become popular during the time of prohibition and many of them that are still popular today, were invented around that time. However these cocktails had to originate somewhere. Many of them, during that time were slightly updated or were inspired from the 19th century recipes. We were intrigued and wanted to go back to the older days, when the word “cocktail” was used for the first time.

Mid to late 19th century was the dawn of various cocktails at local bars, lounges, hotels and taverns. Barkeepers started to get creative, sometimes mixing what was found around the bar when wine and whiskey ran out. In this book you will find 40 recipes from the 1800s we found, tested and enjoyed the mixing and tasting. Cocktails like the Old Fashioned, Manhattan or Mojito are still very popular today. In the spirit of inventing, we took the liberty to have some fun with the garnishes.
